Nothing is plated for one. The middle of the table is the point.
How we cook
We opened in a former grocer on Haga Nygata: one room, a loud kitchen, vermouth on tap. The idea was never a tasting menu. Plates leave when they are ready. You eat with your hands. You order again.
The kitchen is Spanish in its oil and paprika, Gothenburg in its hours. We buy fish the same morning, fry padrón until they blister, and keep the bread coming. If the table is full, stand at the bar. The night is long enough.
If the oil is hot and the bread is on the table, the rest will follow.Inés Molina, chef

Hot oil, then the next pan. We do not wait for a sequence.
Kitchen until 23. After that: vermouth, records, one more round.
